What to do with all these herbs?

This is a tip from one of our longtime CSA customers Hollie.

It you have lots of fresh herbs from your garden or CSA this time of year preserve them by making herb salt! It can go in pasta sauces, be mixed with olive oil to rub meat and chicken with before you cook it or pretty much anything that you put herbs and salt in. This one has parsley, basil, rosemary, and green onion. 1/4 cup salt to 1 cup roughly chopped herbs. It will stay fresh and green like this for a year in the fridge.

    Wow I never knew this trick .So do I add oil to the herbs in the fridge too? I love the fresh herbs.Thanks so much for the info. Debbie
