Pickling Cucumbers…


This week our regular share boxes have several pickling cucumbers in them. The plants are just starting to bear. Within the next couple of weeks we will start taking orders for bulk amounts. So keep checking the box post each week.

Pickling cucumbers are designed for making pickles but they are delicious for fresh eating as well. They are great sliced for a salad or sandwich. A little oil and vinegar and dill weed can transform this little gem into a delightful side dish. Or chop them up finely to make some Taziki sauce. I have included a few links below for you to give a whirl if you are looking for some ideas.

Got Chard?


this shop has some nice heirloom seeds:

We grow three different types of chard: Swiss, red and rainbow (a variety of colors with shades of white, yellow, pink and red). Isn’t it gorgeous!

Chard can be used in almost any recipe that calls for spinach. You can add it to salads to add some color and texture besides just lettuce. Chop it up and toss it in soups. Throw it in your smoothie. My favorite way is to simply caramelize some sliced onions and garlic in olive oil. Then toss in  roughly chopped chard and saute until it is done to your likeness. A simple but heart healthy side dish. Just like spinach it cooks down quite a bit. If you have any leftover, toss it in your morning eggs or frittata.

We have been having fun trying and posting new recipes using the items you will have in your box. We would love for you to share your recipes as well.

The strawberries are in a bit of a slump. Those that have requested berries last week, I will contact you if we have them available.
